What is (is) man?
Our whole existence is deeply rooted in what we eat every day, our food: "If you want to live ethically well, you will have to eat well to do so - fortunately not a particularly unpleasant task," says Lemke. Our nutrition is unalterably at the centre of being human: "I think, therefore I am", does not go far enough here - shouldn't it say: "We eat, therefore we are"?
Despite the great importance of our food, there is a lack of appreciation of the basics of life and awareness of nutrition. What is needed is a gastrosophical revolution, a radical turnaround, in which the "eating" of man is revealed: The tomato is round so that food can change direction!
Harald Lemke is a philosopher, author and director of the International Forum Gastrosophy, a transdisciplinary think tank on nutrition. He teaches at the Centre for Gastrosophy at the University of Salzburg and at the Slow Food University of Gastronomic Sciences Pollenzo (Italy). He also holds guest professorships in Kyoto and Shanghai and is co-founder of the Hamburg Nutrition Council.
